Method

Lamb Shank Preparation

    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Season the lamb shanks with salt and pepper, then sear them on all sides until browned, about 4-5 minutes per side. Remove the shanks and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes. Add sliced carrots and zucchini, cooking for another 5 minutes.

    Add Remaining Ingredients

    Stir in diced tomatoes, chicken broth, cinnamon stick, cumin, paprika, along with the seared lamb shanks. Bring to a boil, then reduce heat to low.

    Braise the Lamb

    Cover the pot and let it simmer for about 2 hours, or until the lamb is tender and falling off the bone. Stir occasionally and add more broth if needed.

Herbed Couscous Preparation

    Prepare Couscous

    In a bowl, combine couscous and salt. Pour boiling water over the couscous, cover, and let sit for 5 minutes.

    Fluff and Add Herbs

    After 5 minutes, fluff the couscous with a fork and stir in olive oil and chopped parsley.

Serving

    Serve the Dish

    Serve the braised lamb shank over a bed of herbed couscous, garnished with fresh cilantro.
