Preparation of Garlic Oil
Make Garlic Oil
In a small saucepan, heat the olive oil over low heat. Add the crushed garlic cloves and let simmer for about 10 minutes. Remove from heat and let it cool. Strain the oil to remove garlic pieces.
Preparation of Balsamic Reduction
Make Balsamic Reduction
In a small saucepan, bring the balsamic vinegar to a boil. Reduce the heat to low and simmer until it thickens and reduces to about half its volume (approximately 15-20 minutes). Let it cool.
Assembly
Assemble the Dish
Thinly slice the fresh tuna and arrange it on a plate. Drizzle the garlic oil over the tuna slices. Top with arugula, diced olives, and sun-dried tomatoes. Finally, drizzle the balsamic reduction over the top.
Serve
Serve the tuna carpaccio on a plate with focaccia slices on the side.
