Cooking Process

  1. 1

    Prepare the Gnocchi

Bring a large pot of salted water to a boil. Add the potato gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

  2. 2

    Sauté the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the charred cherry tomatoes and cook for 2-3 minutes until they start to blister. Add the sliced olives and cook for another minute.

  3. 3

    Fry the Gnocchi

In the same skillet, add the remaining 2 tablespoons of olive oil. Add the cooked gnocchi and fry until they are golden and crispy, about 4-5 minutes. Stir occasionally to ensure even cooking.

  4. 4

    Add Spinach and Season

Add the fresh spinach to the skillet and cook until wilted, about 2 minutes. Season with salt and black pepper to taste.

  5. 5

    Finish and Serve

Remove the skillet from heat, sprinkle with grated Parmesan cheese and fresh basil leaves. Serve warm.
