Prepare the Chicken
Season the chicken thighs with salt and black pepper. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Bread the Chicken
Dredge each chicken thigh in flour, then dip in the beaten eggs, and finally coat with panko breadcrumbs. Ensure each piece is fully coated.

Prepare the Cucumber
Using a vegetable peeler, create long ribbons of cucumber and set aside.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded chicken thighs and fry until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Make the Spicy Mayo
In a small bowl, mix mayonnaise and sriracha together until well blended. Adjust to taste.

On a plate, place the fried chicken, drizzle with hoisin sauce, and top with cucumber ribbons, spicy mayo, and micro greens.
