Method

Preparation of Potatoes

  1. 1

    Peel and Cut Potatoes

Peel the Yukon Gold potatoes and cut them into even-sized chunks, about 1-2 inches in size.

  2. 2

    Boil Potatoes

Place the cut potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water. Bring the pot to a boil over high heat, then reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.

Cream Mixture Preparation

  1. 3

    Heat Cream and Butter

In a small saucepan, combine the heavy cream and unsalted butter. Heat over low heat until the butter has melted and the mixture is warm, but do not allow it to boil.

Combining Ingredients

  1. 4

    Drain Potatoes

Once the potatoes are cooked, drain them in a colander and return them to the pot.

  2. 5

    Mash Potatoes

Using a potato masher or ricer, mash the potatoes until smooth and creamy.

  3. 6

    Add Cream Mixture

Pour the warm cream and butter mixture into the mashed potatoes. Stir gently to combine until everything is well incorporated.

  4. 7

    Season with Salt and Pepper

Season the whipped potatoes with additional salt and black pepper to taste, mixing well.

Garnishing

  1. 8

    Chop Scallions

Finely chop the scallions, both the green and white parts.

  2. 9

    Garnish Potatoes

Sprinkle the chopped scallions on top of the whipped potatoes before serving.
