Method

Preparation of Swordfish

    Marinate the Swordfish

    In a bowl, combine the olive oil, lemon juice, salt, and black pepper. Add the swordfish steaks and coat them well in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Grill

    Preheat your wood grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.

Grilling the Swordfish

    Grill the Swordfish

    Remove the swordfish from the marinade and place them on the hot grill. Grill for about 4-5 minutes on each side, or until the fish is cooked through and has nice grill marks.

Preparing Grilled Rapini

    Prepare the Rapini

    While the swordfish is grilling, rinse the rapini under cold water. Trim any tough stems.

    Grill the Rapini

    Toss the rapini with olive oil, minced garlic, salt, and pepper. Place them on the grill and cook for about 4-5 minutes, turning occasionally until they are tender and slightly charred.

Making the Cauliflower Puree

    Cook the Cauliflower

    In a large pot, bring salted water to a boil. Add the chopped cauliflower and cook for about 10-12 minutes until tender.

    Blend the Cauliflower

    Drain the cauliflower and transfer it to a blender. Add heavy cream, butter, salt, and black pepper. Blend until smooth and creamy.

Plating the Dish

    Assemble the Dish

    On each plate, spread a generous spoonful of the cauliflower puree. Place the grilled swordfish on top, followed by the grilled rapini.

    Add Garnishes

    Sprinkle the chopped dates and toasted almonds over the swordfish and rapini. Top with micro broccoli, lemon zest, and drizzle with Agrumato.
