Prepare Beef Tenderloin

    Prepare the Coffee Rub

    In a small bowl, combine ground coffee, brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Mix well to create a rub.

    Rub the Beef

    Pat the beef tenderloin dry with paper towels. Generously coat the beef with the coffee rub, pressing it into the meat. Let it sit at room temperature for about 30 minutes to allow the flavors to meld.

Cook Vegetables

    Prepare the Vegetables

    Slice the bell peppers and onion into thin strips.

    Sauté the Vegetables

    In a large skillet over medium heat, add a tablespoon of oil. Once hot, add the sliced bell peppers and onion. Sauté for about 5-7 minutes until they are softened and slightly caramelized. Remove from skillet and set aside.

Cook Beef Tenderloin

    Sear the Beef

    In the same skillet, add another tablespoon of oil if needed. Increase the heat to medium-high. Sear the beef tenderloin on all sides for about 2-3 minutes per side until a crust forms.

    Lower the heat to medium and continue to cook the beef tenderloin for an additional 10-15 minutes, or until it reaches your desired level of doneness (135°F for medium rare).

    Remove the beef from the skillet and let it rest on a cutting board for at least 5-10 minutes before slicing.

Prepare Sauce and Bread

    In a small saucepan, heat the chili steak sauce over medium heat until warmed through. Stir occasionally.

    While the sauce is heating, toast the Texas toast slices in a toaster or on a skillet until golden brown.

    Slice the rested beef tenderloin into bite-sized pieces. Arrange the beef on a serving platter, topped with sautéed vegetables. Drizzle the warmed chili steak sauce over the top and serve with toasted Texas toast on the side.
