Crostini Preparation

    Slice the Baguette

    Preheat your oven to 400°F (200°C). Slice the baguette into 1/2-inch thick slices.

    Prepare Garlic Oil

    Mince the garlic cloves and mix them with the olive oil in a small bowl.

    Brush and Bake

    Brush both sides of each baguette slice with the garlic oil. Place them on a baking sheet and bake for about 8-10 minutes or until golden and crispy.

Sweet Onion Bouillon Preparation

    Sauté the Onions

    Peel and slice the sweet onions. In a large pot, melt the butter over medium heat and add the sliced onions. Sauté for about 15-20 minutes until the onions are soft and caramelized.

    Add Broth and Seasonings

    Pour in the vegetable broth, and add thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil.

    Simmer

    Reduce heat and let it simmer for about 30 minutes to allow the flavors to meld. Stir occasionally.

    Strain the Bouillon

    After simmering, strain the bouillon to remove the onions and other solids. You can reserve the onions for another use if desired.

Assembly

    Top the Crostini

    Once the crostini are baked, take them out of the oven and top each slice with a piece of Truffle Gouda cheese.

    Melt the Cheese

    Return the topped crostini to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven, sprinkle with fresh chives, and serve warm alongside the sweet onion bouillon.
