Rub the pork chops with olive oil, followed by salt, black pepper, garlic powder, smoked paprika, chopped rosemary, and chopped thyme. Ensure that both sides are evenly coated.

Soak the applewood chips in water for about 30 minutes, then drain. Preheat your smoker to 225°F (107°C).
