Prepare the Filling

Mix Filling Ingredients
In a large mixing bowl, combine the ground pork, finely shredded cabbage, chopped green onions, grated ginger, and grated carrot. Mix well until all ingredients are evenly incorporated.
Assemble Potstickers

Fill Wrappers
Take a potsticker wrapper and place about 1 tablespoon of the filling mixture in the center of the wrapper. Moisten the edges with a little water, fold the wrapper in half, and pinch to seal. Repeat this process with the remaining wrappers and filling.
Cook Potstickers

Pan-Fry Potstickers
Heat the vegetable oil in a large non-stick skillet over medium-high heat. Once hot, add the potstickers in a single layer, ensuring they do not touch each other. Cook for about 2-3 minutes until the bottoms are golden brown.

Steam Potstickers
Carefully add 1/4 cup of water to the skillet and cover immediately with a lid. Allow to steam for about 5 minutes, or until the water has evaporated and the potstickers are cooked through.
Prepare the Glaze

Mix Glaze Ingredients
In a small bowl, whisk together the soy sauce, mirin, sesame oil, and sugar until well combined.
Serve

Plate and Drizzle
Remove the potstickers from the skillet and place them on a serving platter. Drizzle the soy and mirin glaze over the potstickers and serve hot.
