Preparation of Vegetables

    Shave the Vegetables

    Using a vegetable peeler or mandoline, shave the zucchini, carrot, radish, and cucumber into thin ribbons. Place the shaved vegetables into a large mixing bowl.

Herb Preparation

    Chop the Herbs

    Roughly chop the fresh parsley, mint, and basil. Add the chopped herbs to the bowl with the shaved vegetables.

Vinaigrette Preparation

    Make the Vinaigrette

    In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, honey, salt, and black pepper until well combined and emulsified.

Combine and Serve

    Toss the Salad

    Drizzle the vinaigrette over the shaved vegetables and herbs. Toss everything gently until well coated. Adjust seasoning if necessary.
