Roast the Cauliflower
Preheat your oven to 425°F (220°C). Cut the cauliflower into florets, place them on a baking sheet, and drizzle with olive oil. Season with salt and pepper. Roast for about 25-30 minutes or until golden brown and tender.

Make the Cheese Sauce
In a saucepan, melt the butter over medium heat. Add the flour and stir for about 1 minute to create a roux. Slowly whisk in the milk and continue to whisk until the mixture thickens. Stir in the Irish cheddar cheese, mustard powder, paprika, and nutmeg until melted and smooth. Season with salt and pepper to taste.

Combine Lobster and Cauliflower
In a large mixing bowl, combine the roasted cauliflower and cooked lobster meat. Pour the cheese sauce over the mixture and gently stir to combine, ensuring the lobster and cauliflower are well coated.

Transfer the mixture to a baking dish and spread it evenly. Bake in the oven at 400°F (200°C) for 15-20 minutes until bubbly and golden on top.

Toast the Baguette
Slice the baguette into 1-inch pieces and place them on a baking sheet. Toast in the oven for about 5-7 minutes until crispy and golden.

Remove the lobster and cauliflower cheese from the oven and let it cool for a couple of minutes. Serve hot with toasted baguette slices on the side.
