For the Smoked Chicken Filling

    Prepare the Filling

    In a large skillet over medium heat, add diced onions, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Garlic

    Add minced garlic and sauté for another 1-2 minutes until fragrant.

    Combine Ingredients

    Stir in the shredded smoked chicken, chicken broth, heavy cream, frozen peas, thyme, salt, and black pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.

For the Butter Crust

    Make the Dough

    In a large bowl, combine flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

    Add Water

    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.

For Assembling and Baking

    Preheat Oven

    Preheat the oven to 425°F (220°C).

    Roll Out the Crust

    On a floured surface, roll out one disc of dough to fit a 9-inch pie dish. Place the crust in the pie dish and fill it with the smoked chicken filling.

    Top with Second Crust

    Roll out the second disc of dough and place it over the filling. Seal the edges by crimping with your fingers or a fork. Cut slits in the top crust to allow steam to escape.

    Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown. Let it cool for 10 minutes before serving.
