Marinated Roasted Tomato Jam

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare Tomatoes
In a mixing bowl, combine the cherry tomatoes, 2 tablespoons of olive oil, minced garlic, fresh thyme, salt, and black pepper. Toss well to coat.

Roast Tomatoes
Spread the tomato mixture onto a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until the tomatoes are soft and slightly caramelized.

Cool and Mash
Remove the tomatoes from the oven and let them cool slightly. Once cooled, mash them gently with a fork for a jam-like consistency.

Prepare Focaccia
Slice the focaccia bread into thick pieces, about 1-inch wide.

Grill Focaccia
Preheat a grill or grill pan over medium heat. Grill the focaccia slices for about 2-3 minutes on each side, or until grill marks appear and the bread is crispy.
Assemble the Dish

Plate the Ingredients
On a serving platter, place the grilled focaccia slices.

Add Burrata
Place the burrata cheese in the center of the platter, surrounded by the roasted tomato jam.

Garnish
Sprinkle fresh basil leaves and pine nuts over the burrata. Drizzle with balsamic glaze to taste.
