Method

Preparing Ahi Tuna

    Slice the Ahi Tuna

    Using a sharp knife, slice the Ahi tuna into thin carpaccio-style pieces, about 1/8 inch thick. Place the slices on a serving platter.

    Season the Tuna

    Drizzle the olive oil over the tuna slices. Sprinkle with sea salt and black pepper to taste. Set aside to marinate while you prepare the mousse.

Making Avocado Wasabi Mousse

    Prepare the Avocado

    Cut the ripe avocado in half, remove the pit, and scoop the flesh into a blender or food processor.

    Blend the Mousse

    Add the wasabi paste, lemon juice, and salt to the avocado. Blend until smooth and creamy, scraping down the sides as needed. Adjust salt to taste.

Assembling the Dish

    Plate the Carpaccio

    Spread a generous dollop of the avocado wasabi mousse in the center of each plate.

    Top with Ahi Tuna

    Arrange the marinated Ahi tuna slices over the mousse, overlapping them slightly.

    Sprinkle toasted sesame seeds and fresh cilantro leaves over the top for garnish.
