Method

Preparation of the Chateaubriand

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C). This ensures the meat cooks evenly.

  2. 2

    Prepare the Meat

Remove the Chateaubriand from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

  3. 3

    Season the Meat

Rub the Chateaubriand with olive oil, and then season generously with kosher salt, black pepper, garlic powder, and fresh rosemary on all sides.

Cooking the Chateaubriand

  1. 4

    Sear the Meat

In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, carefully place the Chateaubriand in the skillet and sear for about 3-4 minutes on each side until browned.

  2. 5

    Roast in the Oven

Transfer the skillet to the preheated oven and roast for 20-25 minutes for medium-rare, or until the internal temperature reaches 130-135°F (54-57°C).

  3. 6

    Rest the Meat

Once done, remove the Chateaubriand from the oven and tent it with foil. Let it rest for at least 10 minutes before slicing.

Optional Sides Preparation

  1. 7

    Prepare Asparagus

While the meat is resting, rinse the asparagus and snap off the woody ends. Toss with olive oil, salt, and pepper, then roast in the same oven for about 10-12 minutes until tender.

  2. 8

    Prepare Baby Potatoes

Cut the baby potatoes in half, toss with olive oil, salt, and pepper, and roast alongside the asparagus for 20-25 minutes until golden and crispy.

  3. 9

    Finish with Butter

In a small pan, melt butter and drizzle over the asparagus and potatoes just before serving.
