Prepare and dry-shake

Chill a coupe or Nick & Nora glass in the freezer or fill it with ice water to chill while you prepare the cocktail. In a cocktail shaker combine vodka, white rum, white crème de cacao, fresh lime juice, simple syrup, heavy cream, coconut milk, and the egg white.

Dry shake for foam

Seal the shaker and shake vigorously without ice for 15–20 seconds. This emulsifies the cream and egg white and creates a silky foam.

Add ice and shake cold

Add the ice to the shaker and shake again for 12–15 seconds until the outside of the shaker is frosty and the mixture is well chilled. This chills and dilutes the drink to the proper balance.

Double strain and serve

Discard ice from your chilled glass (or remove it). Double-strain the cocktail through a fine-mesh strainer into the chilled coupe to remove tiny ice shards and achieve a smooth texture with a thick foam head.

Garnish

Lightly toast the coconut flakes in a dry skillet over medium heat for 1–2 minutes until golden and fragrant; cool. Sprinkle the toasted coconut flakes across the foam, then grate a small amount of lime zest over the top (about 1/4 teaspoon). Finish by resting a single micro mint or small mint leaf on the foam for aroma.
