Hibiscus Simple Syrup

Make syrup
Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture begins to simmer (about 3β4 minutes).

Add hibiscus
Add 1 cup dried hibiscus petals (or 1 hibiscus tea bag) and 1 tablespoon fresh lime zest to the simmering syrup. Reduce heat to low and let steep, stirring occasionally, for 5 minutes. The liquid will turn deep magenta.

Cool and strain
Remove the saucepan from heat and let the syrup steep for an additional 10 minutes off the heat for maximum flavor. Strain the syrup through a fine mesh sieve into a heatproof container, pressing gently on solids to extract liquid. Discard solids and let syrup cool to room temperature. Refrigerate until chilled. (Yields about 1 to 1 1/4 cups.)

Chill glassware and soda
If possible, chill serving glasses in the freezer for 10β15 minutes and make sure the club soda is well chilled.

Mix lime and syrup
In a large measuring cup or pitcher, combine 3/4 cup fresh lime juice and 3/4 cup chilled hibiscus simple syrup. Stir to blend. Taste and adjust: add up to 2 tablespoons more syrup for sweetness or up to 2 tablespoons more lime juice for brightness, if desired.

Garnish and serve
Garnish each glass with a lime wheel or wedge and an optional mint sprig. Serve immediately with a straw or stirring spoon so guests can 'swipe' the hibiscus layer into the lime soda for visual effect and flavor contrast.
