Preparation of Fingerlings

    Roast the Fingerlings

    Preheat the oven to 400°F (200°C). Toss the fingerling potatoes with olive oil, rosemary, garlic powder, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 25-30 minutes until golden and crispy.

Cooking Bacon

    Cook the Bacon

    In a skillet over medium heat, cook the house smoked bacon until crispy, about 5-7 minutes. Remove and let drain on paper towels.

Cooking Eggs

    Cook the Eggs

    In the same skillet, add butter and heat until melted. Crack the eggs into the skillet and cook them to your preference (sunny-side up, over-easy, etc.), about 2-4 minutes. Season with salt and pepper.

Serving

    On a plate, arrange the crispy fingerlings, top with the cooked eggs, and place the crispy bacon on the side. Serve immediately.
