Winemaking Process

1. Harvesting

Harvest the Pinot Noir grapes when they are fully ripe, usually in late summer to early fall.

2. Crushing

Crush the grapes to release the juice. This can be done by hand or with a grape crusher.

3. Fermentation

Transfer the crushed grapes and juice into a fermentation vessel. Add the yeast, sugar, and tannin if using. Allow it to ferment for about 1-2 weeks at a controlled temperature.

4. Pressing

Once fermentation is complete, press the mixture to separate the liquid wine from the grape skins.

5. Aging

Transfer the wine to oak barrels or stainless steel tanks for aging. Aging should last for at least 6 months.

6. Bottling

After aging, filter and bottle the wine. Seal the bottles with corks and allow them to rest for a few months before consuming.
