Directions
- 1
Cook the Rigatoni
Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rigatoni.
- 2
Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and Calabrian chili paste, cooking for 1-2 minutes until fragrant.
- 3
Add Vodka
Carefully pour in the vodka, allowing it to simmer for about 2-3 minutes to cook off the alcohol.
- 4
Mix in Cream and Tomatoes
Stir in the heavy cream and crushed tomatoes. Season with salt and black pepper to taste. Allow the sauce to simmer for 5-7 minutes.
- 5
Combine Pasta and Sauce
Add the drained rigatoni to the skillet. Toss to coat the pasta in the sauce, adding reserved pasta water as needed to reach desired consistency.
- 6
Finish and Serve
Remove from heat and stir in the chopped basil. Serve the pasta topped with pieces of burrata cheese and additional basil if desired.
