Burger Preparation

    Prepare the Onion-Bacon Compote

    In a skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Add the chopped bacon and cook until crispy. Stir occasionally and cook for another 5-7 minutes. Remove from heat and set aside.

    Cook the Burger Patties

    Form the ground beef into two equal patties. Season each side with salt and black pepper. Heat a grill or skillet over medium-high heat and cook the patties for about 4-5 minutes on each side for medium doneness. In the last minute of cooking, place a slice of aged cheddar on each patty and cover to melt.

    Assemble the Burger

    Toast the brioche buns lightly. On the bottom half of each bun, place the melted cheddar patty, followed by a generous spoonful of the onion-bacon compote and a couple of pickle slices. Top with the other half of the bun.

    Serve

    Serve the RD Burger with a side of your choice: herbed fries, Old Bay fingerling chips, or a side salad.
