Add Rice and Wine
Add Arborio rice to the pan, stirring for 1-2 minutes until the rice is lightly toasted. Pour in white wine, and simmer until absorbed.

Add Broth Gradually
Begin adding vegetable broth, one ladle at a time, stirring frequently until each addition is absorbed before adding the next. This process will take about 18-20 minutes.

Incorporate Peas and Mascarpone
When the rice is al dente, stir in English peas, mascarpone cheese, butter, salt, and black pepper. Cook for an additional 2 minutes.

Prepare the Crispy Artichokes
While the risotto cooks, preheat the oven to 400°F (200°C). Drain and dry artichoke hearts, then toss them in panko breadcrumbs, a pinch of salt, and olive oil. Spread on a baking sheet and bake for 15-20 minutes until golden and crispy.

Cook the Salmon
Season the Norwegian salmon fillets with salt, black pepper, and lemon zest. Heat the remaining olive oil in a skillet over medium-high heat. Cook the salmon for about 4-5 minutes on each side or until cooked through.

On a plate, serve a generous scoop of the English pea-mascarpone risotto topped with the crispy artichokes and the pan-seared salmon. Garnish with fresh parsley.
