Hummus and Toppings

Method

Preparation

  1. 1

    Make the Green Goddess Hummus

In a food processor, combine the canned chickpeas, tahini, parsley, basil, garlic, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy, adding water as necessary to reach desired consistency.

  2. 2

    Prepare Spring Onion Salsa

Chop the spring onions finely and mix them in a bowl. You can add a drizzle of olive oil, salt, and pepper to enhance the flavor.

  3. 3

    Candied Pine Nuts

In a small pan over medium heat, combine pine nuts and brown sugar. Stir continuously until the sugar melts and coats the nuts. Remove from heat and let cool.

  4. 4

    Serve

Spoon the hummus into a serving bowl, top with spring onion salsa and candied pine nuts. Serve with warm pita bread on the side.
