Cauliflower Steak

Pine Nut-Raisin Gremolata
Method
Prepare Cauliflower Steak

Preheat Oven
Preheat your oven to 425°F (220°C).

Slice Cauliflower
Remove the leaves from the cauliflower and slice it into 1-inch thick steaks. You should be able to get about 2-3 steaks from one cauliflower.

Season and Coat
In a bowl, combine olive oil, cornstarch, soy sauce, honey, rice vinegar, garlic powder, ginger powder, red pepper flakes, and salt. Coat the cauliflower steaks in the mixture.

Bake
Place the cauliflower steaks on a baking sheet and bake for 20-25 minutes or until golden brown and tender.
Make Pea Puree

Cook Peas
In a saucepan, bring vegetable broth to a boil. Add the frozen peas and cook for about 2-3 minutes until tender.

Blend
Drain the peas and transfer them to a blender. Add olive oil, lemon juice, and salt. Blend until smooth.
Prepare Gremolata

Mix Ingredients
In a small bowl, combine pine nuts, raisins, fresh parsley, lemon zest, and salt. Mix well.
Serve

Plate the Dish
On a plate, spread a layer of the pea puree, top with the roasted cauliflower steak, and sprinkle with the pine nut-raisin gremolata.
