Prepare the Pork Chops

    Seasoning the Chops

    Rub the pork chops with olive oil and coat them with Cajun seasoning. Let them sit for at least 30 minutes to absorb the flavors.

    Cooking the Chops

    Heat a grill or cast-iron skillet over medium-high heat. Cook the pork chops for 5-7 minutes on each side until they are blackened and cooked through.

Make the Yellow Squash Crema

    Cooking the Squash

    In a saucepan, bring water to a boil and add chopped yellow squash. Cook until tender, about 5 minutes. Drain and cool.

    Blending the Crema

    In a blender, combine the cooked squash, sour cream, garlic, lemon juice, and salt. Blend until smooth and creamy.

Crunchy Spring Garlic Potatoes

    Boiling the Potatoes

    Bring a pot of salted water to a boil. Add new potatoes and cook until tender, about 15 minutes. Drain and let cool slightly.

Prepare the Cherry Pepper Jus
