Baked Salmon

Preheat and prepare fish
Preheat oven to 400°F (200°C). Pat salmon fillets dry with paper towels and place skin-side down on a rimmed baking sheet lined with parchment or lightly oiled.

Make glaze
In a small bowl whisk together 2 tbs olive oil, 2 tbs lemon juice, 2 tsp minced garlic, 1 tbsp dijon mustard, 1 tbsp honey, 2 tsp chopped fresh dill, 1 tsp salt and 1 tsp black pepper until smooth.

Glaze and bake
Brush or spoon the glaze evenly over the top of each fillet. Let sit 5 minutes at room temperature while oven finishes preheating. Bake on center rack for 10–14 minutes, depending on thickness (salmon is done when internal temperature reaches 125–130°F/52–54°C for medium). If you prefer a lightly caramelized top, broil for the last 1–2 minutes, watching closely to avoid burning.

Rest
Remove salmon from oven and let rest 3–5 minutes before serving to allow juices to redistribute.

Sauté aromatics and mushrooms
While oven is preheating (or while salmon bakes), heat 1 tbs olive oil or butter in a medium saucepan over medium heat. Add the finely chopped shallot (or onion) and cook 2–3 minutes until softened. Add 1 tsp minced garlic and the sliced mushrooms and cook, stirring occasionally, until mushrooms release their liquid and it evaporates and they begin to brown, about 6–8 minutes.

Simmer
Add 3 cups water or low-sodium stock, 1 tsp salt, 1 tsp black pepper and 1 tsp tamari. Stir once, bring to a gentle boil, then reduce heat to low, cover with a tight-fitting lid and simmer undisturbed for 15 minutes (check package directions for your rice type — adjust time if using brown rice).

Roasted Broccoli

Prep and roast
Toss 1 lb broccoli florets with 1 tbs olive oil, 1 tsp lemon zest, 1/2 tsp salt, 1/4 tsp black pepper and 1/4 tsp red pepper flakes (if using) on a sheet pan. Spread in a single layer. Roast in the oven at 400°F (200°C) for 12–16 minutes until edges are crisp-tender and florets have some char.

Finish
Remove from oven and taste for seasoning. Add an extra squeeze of lemon if desired and serve immediately alongside the baked salmon and mushroom rice.
