Cooking Pasta

    Boil the Water

    In a large pot, bring salted water to a rolling boil.

    Cook the Spaghetti

    Add the spaghetti to the boiling water and cook according to package instructions until al dente.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of the pasta cooking water.

    Drain the Pasta

    Drain the spaghetti and set aside.

Preparing the Sauce

    Cook the Pancetta

    In a large skillet over medium heat, cook the pancetta or guanciale until crispy, about 4-5 minutes. Remove from heat.

    Mix Eggs and Cheese

    In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combining Ingredients

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with the pancetta and toss to combine.

    Add Egg Mixture

    Quickly pour the egg and cheese mixture over the pasta, tossing vigorously to combine. The heat from the pasta will cook the eggs and create a creamy sauce.

    Adjust Consistency

    If the sauce is too thick, add reserved pasta water a little at a time until the desired creaminess is achieved.

    Season to Taste

    Taste and adjust seasoning with salt and more black pepper if needed.

Serving

    Plate the Pasta

    Serve the spaghetti carbonara immediately, garnished with additional grated Parmesan and freshly ground black pepper.
