Preparation

Mashing

1. Heat Water

In a large pot, heat 5 gallons of filtered water to 165°F (74°C).

2. Add Grains

Add 6 cups of pale malt, 1 cup of caramel malt, and 0.5 cup of roasted barley to the hot water.

3. Mash

Stir the mixture and hold it at 150°F (65°C) for 60 minutes to allow the sugars to extract.

4. Sparge

After 60 minutes, raise the temperature to 170°F (77°C) and hold for 10 minutes.

5. Drain Liquid

Remove the grain bag, and let the liquid drain into the pot.

Boiling

6. Boil Wort

Bring the wort (liquid) to a boil.

7. Add Bittering Hops

Add 1 oz of bittering hops and boil for 60 minutes.

8. Add Aroma Hops

With 5 minutes left in the boil, add 0.5 oz of aroma hops.

Cooling and Fermentation

9. Cool Wort

Cool the wort rapidly to room temperature using an immersion chiller or an ice bath.

10. Transfer and Pitch Yeast

Transfer the cooled wort to a sanitized fermenter and pitch the ale yeast.

11. Ferment

Seal the fermenter with an airlock and let it ferment at room temperature for 1-2 weeks.

Bottling

12. Prepare Priming Sugar

Dissolve 0.5 cups of corn sugar in 2 cups of boiling water to create priming sugar solution.

13. Mix Priming Sugar

Add the priming sugar solution to the fermented beer and mix gently.

14. Bottle Beer

Bottle the beer in sanitized bottles and cap them securely.

15. Carbonate

Let the bottles carbonate at room temperature for 1-2 weeks before refrigerating.
