Base Preparation

Heat the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Cook the Mixture
Return the combined mixture to the saucepan and cook over low heat, stirring constantly until it thickens and coats the back of a spoon (about 5-7 minutes).

Add Flavoring
Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate for at least 2 hours or until chilled.

Prepare Flavors
For strawberry gelato, puree the fresh strawberries in a blender until smooth. For chocolate gelato, mix in the chocolate syrup. For pistachio gelato, fold in the chopped pistachios.

Churn the Gelato
Pour the chilled base mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.
