Calamari Preparation

Prepare the Calamari
In a large bowl, combine the fresh calamari with salt, black pepper, paprika, and garlic powder. Toss well to coat the calamari evenly. Let it marinate for about 15 minutes.

Prepare the Breading
In a separate bowl, mix the all-purpose flour and cornstarch together. This will create a light and crispy coating for the calamari.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the batter into the oil; it should sizzle and rise to the surface.

Fry the Calamari
Dredge each piece of marinated calamari in the flour and cornstarch mixture, shaking off any excess. Fry the calamari in batches, making sure not to overcrowd the pan, for about 2-3 minutes or until golden brown. Use a slotted spoon to remove the calamari and transfer to a paper towel-lined plate to drain excess oil.

Mix the Aioli
In a small bowl, combine the mayonnaise, minced garlic, lemon juice, olive oil, and salt. Stir until well combined. Adjust seasoning to taste.

Serve the crispy fried calamari hot with the garlic aioli on the side for dipping.
