Salmon Preparation
1. Prepare the salmon
Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil, and season with salt and black pepper on both sides.
2. Grill the salmon
Place the salmon fillets skin-side down on the grill. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
3. Add lemon
Squeeze fresh lemon juice over the grilled salmon just before serving.

4. Prepare the ingredients
In a blender or food processor, combine the roasted red peppers, tomatoes, garlic cloves, almonds or hazelnuts, olive oil, red wine vinegar, smoked paprika, and salt.
5. Blend the romesco sauce
Blend the mixture until smooth. You may need to scrape down the sides and blend again to ensure everything is well combined.
6. Adjust seasoning
Taste the romesco sauce and adjust seasoning if necessary. If you prefer a thinner consistency, add a little more olive oil or water.
