Fish Preparation

    Make the Batter

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth and well combined.

    Heat the Oil

    In a large, deep saucepan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Cod

    Dip each cod fillet into the batter, ensuring it's fully coated.

    Fry the Fish

    Carefully place the battered cod fillets in the hot oil. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and place on paper towels to drain any excess oil.

    Prepare the Potatoes

    Peel the potatoes and cut them into thick strips to create fries.

    Fry the Fries

    In another pot or fryer, heat oil to 350°F (175°C). Fry the potato strips for about 5-7 minutes until golden brown and crispy. Remove and drain on paper towels, then season with salt to taste.

Tartar Sauce Preparation

    Mix the Ingredients

    In a bowl, combine the mayonnaise, finely chopped pickles, lemon juice, capers, and fresh dill. Mix well until all ingredients are incorporated.

    Refrigerate the tartar sauce for at least 30 minutes before serving to allow the flavors to meld.
