Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated.

Shape the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from oven and let it cool.

Mix the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue mixing until well combined.

Add the sour cream, vanilla extract, and eggs one at a time, mixing on low speed after each addition. Finally, add the all-purpose flour and mix until just combined, being careful not to overmix.

Bake the Cheesecake
Pour the filling into the cooled crust. Bake in the preheated oven at 350°F (175°C) for 50-60 minutes until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

Remove the cheesecake from the oven and let it cool at room temperature for about 1 hour. Once cooled, refrigerate for at least 4 hours or overnight before serving.
