Mash the Grains
In a large mash tun, combine the Pale Malt, Caramel Malt, and Roasted Barley with 5 liters of heated water at 65°C (149°F). Stir well to ensure all grains are saturated. Let it rest for 60 minutes.

Sparging
After the mash rest, sparge the grains with hot water (around 75°C or 167°F) until you collect about 6 liters of wort in the brew kettle.

Boil the Wort
Bring the wort to a boil. Once boiling, add the Hop Pellets and boil for 60 minutes. Stir occasionally to prevent scorching.

Cooling the Wort
After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).

Fermentation
Transfer the cooled wort into a sanitized fermentation vessel. Add the yeast and seal with an airlock. Allow fermentation at 18-20°C (65-68°F) for approximately 1-2 weeks, until fermentation is complete.

Bottling
Once fermentation is complete, dissolve the Priming Sugar in a small amount of boiling water and add it to the beer before bottling. Bottle the beer in sanitized bottles and cap them.

Carbonation
Let the bottled beer carbonate at room temperature for 1-2 weeks.

Chill and Serve
Once carbonated, chill the bottles in the refrigerator. Pour into a glass, leaving the sediment in the bottle, and enjoy your Irish Style Red Ale.
