Brewing Directions

    Mashing

    Start the brewing process by mashing the grains.

    In a large brew kettle, heat 5 gallons of water to 165°F (74°C).

    Add the 9 cups of Base Malt and 1 cup of Caramel Malt to the water.

    Stir the mixture thoroughly and maintain the temperature between 150°F (65°C) and 155°F (68°C) for 60 minutes.

    Sparging

    After mashing, it's time to sparge the grains.

    Heat another 5 gallons of water to 170°F (77°C).

    Slowly pour the hot water over the grains to extract the sugars, collecting the liquid (wort) in the kettle.

    Boiling

    Bring the wort to a boil.

    Once collected, bring the wort to a boil and add 1 oz of Nugget Hops.

    Boil for 60 minutes, adding 0.5 oz of Cascades Hops in the last 15 minutes of the boil.

    Cooling and Fermentation

    Cool the wort and prepare for fermentation.

    After boiling, cool the wort quickly to around 70°F (21°C) using a wort chiller.

    Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast.

    Seal the vessel with an airlock and let it ferment in a dark, cool place for 1-2 weeks.

    Bottling

    Prepare the beer for bottling.

    Once fermentation is complete, prepare a solution of priming sugar by dissolving 3 oz in 2 cups of boiling water.

    Add the priming sugar solution to the fermented beer and gently mix.

    Bottle the beer in sanitized bottles, cap them, and let them carbonate for 1-2 weeks at room temperature.
