    Cook the Filling

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and garlic. Sauté until softened, about 5 minutes.

    Add Beef and Spices

    Add the ground beef to the skillet. Break it up with a spatula and cook until browned. Stir in the cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes.

    Cool the Filling

    Remove the skillet from heat and let the beef mixture cool for a few minutes.

    Assemble the Pastelillos

    Preheat the oven to 375°F (190°C). Take a piece of dough and place a spoonful of the filling in the center. Fold the dough over to create a half-moon shape and crimp the edges to seal. Repeat with remaining dough and filling.

    Egg Wash

    Brush the tops of the pastelillos with the beaten egg for a golden finish.

    Bake

    Place the pastelillos on a baking sheet and bake for 20-25 minutes, or until golden brown.
