In a small bowl combine mayonnaise, ketchup, yellow mustard, sweet dill pickle relish, apple cider vinegar, garlic powder, onion powder, hot sauce (if using), salt and black pepper. Whisk until smooth. Taste and adjust seasoning. Refrigerate while preparing the rest so flavors meld.
Burger Patties (house blend)
Divide the ground beef blend into two equal portions (about 10 oz / 280 g each). Handle the meat gently and form into loose patties roughly 4½ inches (12 cm) wide and about 3/4 inch (2 cm) thick. Make a shallow dimple in the center of each patty with your thumb to help them cook flat.
Season both sides of each patty with kosher salt and freshly ground black pepper. Lightly brush one side of each patty with the Worcestershire sauce, or fold it gently into the meat before forming if you prefer the flavor distributed inside.
Flip the patties and immediately top each with a slice of cheese. Cook another 2–3 minutes for medium-rare to medium (internal temp ~130–140°F / 54–60°C). For medium-well cook an additional 1–2 minutes. If using a lid, cover briefly to help cheese melt.
Remove patties to a warm plate and let rest for 3–4 minutes while you toast the buns and assemble the burger.
Buns & Assembly
To assemble: spread about 1 tablespoon of the house sauce on the bottom bun. Place a handful (about 1/4 cup) of shredded iceberg lettuce on the sauce. Add the cheeseburger patty on top of the lettuce. Place tomato slice, pickles (2 chips), and some thinly sliced red onion on the patty. Spread a thin layer of sauce on the top bun and crown the burger.
Serve immediately with fries or a side of choice.
