Make the dressing
In a medium bowl, whisk together mayonnaise, 2 tablespoons grated parmesan, lemon juice, Dijon mustard, anchovy paste, garlic powder, and Worcestershire. While whisking, slowly drizzle in olive oil until the dressing emulsifies. Season with salt and pepper to taste.

Prepare greens
Rinse the romaine leaves under cold water and dry thoroughly. Remove any wilted parts, then chop the lettuce into bite-sized pieces and place in a large serving bowl.

Toss salad with dressing
Pour a portion of the dressing over the chopped romaine and toss to coat evenly. Add 0.25 cup shaved parmesan to the salad and toss to distribute.

Add toppings and finish
Add 1 cup croutons to the dressed greens and toss gently. Sprinkle the remaining 0.25 cup shaved parmesan over the top for garnish. Adjust salt and pepper to taste.

Serve
Serve immediately as a side dish to main courses. Optional: squeeze additional lemon juice over individual portions.
