    Prep and preheat

    Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line with parchment.

    Make meatloaf mixture

    In a large mixing bowl, soak breadcrumbs in milk for 5 minutes. Add ground beef, egg, onion, garlic, parsley, Worcestershire sauce, thyme, salt, and pepper. Mix gently with a fork or hands until just combined; avoid overworking.

    Prepare glaze

    Whisk together ketchup and brown sugar in a small bowl; set aside.

    Shape loaf and add glaze

    Transfer the meat mixture to the loaf pan or baking sheet; shape into a loaf about 9x5 inches. Spoon or brush a portion of the glaze over the top.

    Bake meatloaf

    Bake in the preheated oven for 45-60 minutes, until the internal temperature reaches 160°F (71°C). Brush with remaining glaze and bake for 10-12 more minutes.

    Cook mashed potatoes

    While the meatloaf bakes, peel potatoes and cut into chunks. Boil in salted water 15-20 minutes until tender. Drain well.

    Mash potatoes

    Mash potatoes with butter and milk until smooth and creamy. Season with salt and pepper to taste; keep warm.

    Slow cook green beans

    Place green beans, onion, garlic, and broth in the slow cooker. Dot with butter; season with salt and pepper. Cook on low for 4-6 hours, or high for 2-3 hours, until beans are tender.

    Serve

    Let meatloaf rest briefly, slice, and plate with mashed potatoes and slow-cooked green beans. Garnish with chopped parsley if desired.
