    Prep shrimp

    Pat the shrimp dry with paper towels. If using frozen shrimp, thaw completely, then pat dry. Lightly season with a pinch of salt and pepper.

    Choose cooking method

    Decide how you’ll finish the shrimp: fry, grill, or chill (boil and chill). If frying or grilling, have oil ready and preheated. If chilling, prepare a pot of salted boiling water and an ice bath.

    Cook or chill shrimp

    Fry: Cook shrimp in hot oil for 1-2 minutes per side until pink and opaque. Grilled: Brush shrimp with a light coat of oil and grill 1-2 minutes per side until pink and opaque. Chill: Boil shrimp in salted water for 1-2 minutes until pink, then transfer immediately to the ice bath to chill completely.

    Make cocktail sauce

    In a small bowl, whisk together ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Taste and adjust with a pinch of salt if needed. Chill sauce until service.

    Serve

    Arrange five chilled or cooked shrimp on a platter with a ramekin of cocktail sauce. Garnish with lemon wedges. If serving chilled, place shrimp on a bed of crushed ice or a chilled plate.
