Prepare crispy potatoes
In a large skillet, heat 2 tablespoons olive oil over medium heat. Add the diced potatoes in a single layer. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook, turning occasionally, until potatoes are golden brown and crispy, about 12–15 minutes. Transfer to a warm plate and keep them in a low oven if needed.

Cook sausage (optional)
If using sausage, remove from casings and crumble into the same skillet. Cook over medium heat until browned and cooked through, about 6–8 minutes. Transfer to a plate and drain excess fat, reserving 1–2 tablespoons of rendered fat if you did not use bacon.

Warm biscuits
If using store-bought biscuits, warm them according to package instructions until heated through and lightly golden, typically 6–8 minutes at 350°F (175°C). If making from scratch, bake your biscuits fresh and keep warm.

Heat sausage gravy
If using prepared sausage gravy, transfer to a small saucepan and heat over low, stirring occasionally until steaming hot. If making gravy from scratch with the sausage, skip this step and proceed after the eggs are done, making a simple roux with the collected sausage fat and flour, then whisk in milk to desired consistency.

Cook the eggs (two eggs any style)
In a nonstick skillet, add a small amount of butter or oil. Crack the two eggs and cook to your preferred style: sunny-side up, over-easy, or fried. Season with a pinch of salt and pepper to taste. If you’re choosing a specific style (e.g., over-easy), gently flip and cook for 1–2 minutes more.
