Prepare the double boiler setup
Fill a pot with 1–2 inches (2–5 cm) of water and bring to a light simmer. Place a heatproof bowl on top, making sure the bottom does not touch the water.

Emulsify with butter
Very slowly drizzle in 1 cup warm clarified butter, whisking constantly, until the sauce is thick, glossy, and emulsified.

Thin and adjust
If the sauce becomes too thick, whisk in 1–2 tablespoons water, in small increments, until creamy and smooth.

Season
Stir in 0.25 teaspoon salt and 0.125 teaspoon cayenne pepper; taste and adjust seasoning as needed.

Finish and serve
Remove from heat. If necessary, brighten with a few drops of lemon juice. Serve immediately over eggs Benedict, roasted vegetables, or fish.
