Roasted carrot dill vinaigrette

    Roast the carrots

    Preheat oven to 425°F (220°C). Toss carrot pieces with 1 teaspoon olive oil and a pinch of salt. Roast on a sheet pan for 25-30 minutes until tender and caramelized.

    Blend the vinaigrette

    Transfer the roasted carrots to a blender. Add chopped dill, remaining olive oil, white wine vinegar, lemon juice, honey, salt, and pepper. Blend until smooth. If too thick, whisk in a tablespoon of water until pourable.

    Rinse the field blend greens and spin dry until completely dry.

    Prepare cucumber by slicing into half-moons; slice tomato into wedges or rounds as you prefer.

    Crumble the goat cheese into small bits.

    Toast the candied pecans in a dry skillet over medium heat for 1-2 minutes until fragrant.
