    Prepare loaded mashed potatoes

    Place peeled and cubed potatoes in a large pot. Cover with cold water, add a pinch of salt, and bring to a boil. Cook until very tender, about 15-20 minutes. Drain well.

    Mash and enrich potatoes

    Return potatoes to the pot. Add butter, heavy cream, sour cream, and milk (if using). Mash until smooth and creamy. Season with salt and pepper to taste.

    Fold in cheese and bacon

    Stir in shredded cheddar, crumbled bacon, and chopped chives. Keep warm.

    Season the filet

    Pat filet dry with paper towels. Season all over with salt and black pepper.

    Sear and finish the filet

    Heat a heavy skillet over high heat and add neutral oil. Sear the filet for 2-3 minutes on the first side, then flip and sear 1-2 minutes on the second side. Transfer to a preheated 400°F (200°C) oven and roast to your preferred doneness (about 4-6 minutes for medium-rare). Remove and rest for 5 minutes.

    Warm the demi-glace

    In a small saucepan, warm the demi-glace until just simmering. If desired, whisk in a small knob of butter for shine.

    Prepare vegetable of the day

    Cook the vegetable of the day by steaming until tender-crisp or roasting with a light drizzle of oil, salt, and pepper. Keep warm.

    Plate and finish

    Spoon a generous bed of loaded mashed potatoes on the plate. Place the filet on top or beside. Drizzle demi-glace over the filet. Arrange the vegetable of the day alongside. Serve immediately.
