    In a medium saucepan, whisk together heavy cream, whole milk, granulated sugar, honey, dried lavender, and a pinch of salt. Bring to a gentle simmer over medium heat, stirring until the sugar is fully dissolved. Do not allow to boil.

    Remove from heat and stir in the vanilla extract.

    Dissolve the gelatin

    Whisk the bloomed gelatin into the warm dairy base until completely dissolved with no gritty texture.
