Prepare potatoes
Rinse and dice potatoes; parboil in salted water for 7-9 minutes until just tender. Drain and set aside.

Sauté vegetables
In a large skillet, heat 1 tablespoon olive oil and 2 tablespoons butter over medium heat. Add diced onion and green bell pepper; sauté 5-7 minutes until softened and lightly browned. Season with a pinch of salt.

Brown corned beef
Push vegetables to the side; crumble in the canned corned beef. Cook 3-4 minutes until heated through and lightly browned, breaking it apart as it cooks.

Creole Hollandaise Sauce

Whisk yolks with lemon
In a heatproof bowl over simmering water, whisk 3 egg yolks with 1 tablespoon lemon juice until slightly thickened.

Emulsify butter into yolks
Slowly drizzle in 1/2 cup melted butter while whisking constantly until the sauce is thick and glossy. Remove from heat.

Season Hollandaise
Stir in Creole seasoning, hot sauce, and salt to taste. Keep warm.
