Dipping Sauce

Method

Marinated Chicken

  1. 1

    Prep and slice chicken

Trim chicken breasts and cut into evenly sized strips about 3/4 inch to 1 inch wide for even cooking.

  2. 2

    Make marinade

In a large bowl, whisk together buttermilk, salt, and hot sauce until well combined.

  3. 3

    Marinate the chicken

Add chicken strips to the marinade, toss to coat, cover, and refrigerate about 30 minutes (or up to 2 hours) for tenderness.

Coating for Chicken

  1. 4

    Prepare dredge stations

In a shallow bowl, whisk eggs with a splash of water. In a separate shallow bowl, combine flour, panko, Parmesan, garlic powder, paprika, salt, and pepper.

Coat and fry

  1. 5

    Heat oil

In a heavy skillet, heat vegetable oil to 350°F (175°C). Do not overfill the pan; maintain a stable temperature.

  2. 6

    Dredge strips

Remove chicken from marinade, shake off excess, then dredge first in flour mixture, dip in egg wash, and finally coat with breadcrumb mixture until evenly coated.

  3. 7

    Fry until golden

Fry in batches about 3-4 minutes per side, until the chicken reaches 165°F (74°C) and the coating is crispy. Transfer to a rack or paper towels to drain.

Dipping Sauce

  1. 8

    Make dipping sauce

In a small bowl, whisk mayonnaise, Dijon mustard, honey, lemon juice, and a pinch of salt until smooth. Adjust sweetness and tang to taste.

Serve

  1. 9

Serve the crispy chicken strips hot with the dipping sauce. Optional: garnish with chopped parsley or serve with lemon wedges.
