Caesar Salad Preparation

Make the dressing
In a small bowl, whisk together the egg yolk, minced garlic, mashed anchovy, lemon juice, Dijon mustard, and Worcestershire sauce. Slowly whisk in the olive oil to emulsify until smooth. Season with salt and pepper to taste. If the dressing is too thick, whisk in a teaspoon of water or more lemon juice.

Chill or set dressing (optional)
Let dressing sit for 5–10 minutes to let flavors meld (optional).

Prepare greens
Rinse and thoroughly dry the romaine lettuce. Remove any brown leaves and chop into bite-sized pieces.

Toss greens with dressing
In a large bowl, add the chopped romaine and a portion of the dressing. Toss to coat lightly; add more dressing gradually until leaves are evenly coated but not soggy.

Add toppings
Sprinkle shaved parmesan over the dressed greens, then add croutons. Gently toss to combine.

Serve
Divide the salad among plates. Finish with an extra crack of black pepper or a few extra parmesan shavings if desired. Serve immediately.
