Method

Biscuit Preparation and Baking

  1. 1

    Preheat oven and prepare pan

Preheat oven to 425 F (220 C). Line a baking sheet with parchment or lightly grease.

  2. 2

    Whisk dry ingredients

In a large bowl, whisk together flour, baking powder, salt, and sugar until evenly distributed.

  3. 3

    Cut in butter

Add cold butter cubes to the flour mixture. Use a pastry blender or two forks to cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized bits of butter.

  4. 4

    Add buttermilk and form dough

Pour in the cold buttermilk gradually and stir with a fork until the dough just comes together and pulls away from the sides of the bowl. Do not overmix.

  5. 5

    Knead lightly and shape

Turn dough onto a lightly floured surface. Gently pat into a 1-inch thick round. Do not overwork; the more you handle, the tougher the biscuits.

  6. 6

    Cut biscuits

Dip a 2-inch round cutter in flour and cut out circles. Gather scraps, pat back to 1-inch thickness, and cut more biscuits until dough is used.

  7. 7

    Bake

Arrange biscuits on the prepared sheet so they touch or are slightly apart depending on desired softness. Bake 12-15 minutes until the tops are golden brown.

  8. 8

    Finish and serve

Remove from oven and let cool 5 minutes. Optionally brush tops with melted butter before serving.
